The scrapper I met was using a product called Mosaic Moments Page Patterns. The pages have discreet lines to guide you in placing your photo squares, keeping them level and equally spaced across the page. What a great idea! For those of us wanting to give mosaics a try without an investment, the same effect is probably doable with pencil, paper, and a little patience.
While not specific to our Cricut machines, these layouts could be embellished further by cutting titles from a font cartridge or even adding a few image cuts. Here's a few interesting photo mosaics I found across the internet:

Who needs a patterned paper background when you have such gorgeous cherry blossom photos?! I love how Theresa overlaid her mosaic with a die cut and 3D flowers.
Helen's beautiful butterfly layout shows just because you cut your photos into squares, doesn't mean you have to fill up all the squares on the page. Genius!
I hope you've been inspired by the mosaics above -- I sure have! Now I just need to get some photos developed and start cutting!
